Our brains make assumptions about our experiences based on what information we are expecting to see. That can lead us to make false assumptions about the world around us.
For instance, did you spot the deliberate typing error in the quote above? Many people will not spot the extra "the" because our brain wasn't expecting to see it there and the sentence makes more sense without it.
